Ingredients:
- ½ stick Unsalted Butter
- 1 Leek, Sliced (white and light green parts only)
- 5 cups Fish Stock
- 1 Carrot, sliced
- 1-pound Potatoes, cubed
- 1-pound Salmon Fillet, de-boned, de-skinned, and cut into small chunks
- 1 cup Half and Half
- 1 cup Fresh Dill for garnish, finely chopped
- Salt and Pepper, to taste
Preparation:
In a pot, melt butter. Add leek and cook until translucent, about 7 minutes.
Add stock, carrot and potatoes. Bring to a boil and cook for 10 minutes over medium heat.
Add salmon pieces and half and half. Cook for 5-7 minutes more, until it begins to boil. Turn off heat. Add dill and seasonings. Cover with lid and wait for another 10 minutes before serving.
